Tofu Scramble

Ingredients (One Serving)

4 Ounces of Tofu
1/2 Cup of Red Bell Pepper
1 Cup of Spinach
1/4 Cup of Red Onion
1 Tbsp of Soy Sauce
1 Tsp of Coconut Oil
1 Tsp of Turmeric
1/2 Tsp of Sea Salt
Pinch of Black Pepper

1. Place a pan on medium heat and add the onions and peppers with the coconut oil. 

2. Once the vegetables become translucent add the tofu to the pan and roughly break it down with a spatula. 

3. Next add the soy sauce, turmeric, salt and pepper and cook for another 5 minutes. 

4. Only add the spinach in the last 2 minutes so that it doesn’t wilt too much.
